We asked our new Consultant Executive chef Justin Wise a few quick questions to share with you all!
Q. Your favourite dish of the new menu?
Would have to be the Murray Cod, how can you go wrong with an amazing native Australian fish and lobster live from Port Campbell?
Q. Favourite wine match of the new menu?
Jean-Luc Mader Pinot Blanc 2012 from France, matched with our potato and artichoke dish, its always such a hard ingredient to match with wine.
Q. Favourite food to cook with?
I love Foie Gras, its just my favourite ingredient, you can have it simply on toast or use it for sauces and in stuffing’s for your Christmas goose.
Q. How old were you when you started cooking?
I started cooking when I was 13 in a kitchen in Wangaratta under my mentor chef, Peter Hoppach, I stayed until I finished my apprenticeship when I was 23. I then moved to Melbourne to start my career here.

I’m afraid of heights, I love fast cars and I have a girlfriend who is vegetarian.
